    How to use this calculator

    1. Pick your direction first. "I have fruit" answers what is in the bag on your counter. "I need juice" answers the question you actually have in the shop, which is how many to put in the basket.
    2. Choose the fruit. A Key lime and a Persian lime are both limes and they are nothing alike: one is a tablespoon, the other is two.
    3. Set the size honestly. This is the control that matters and the one no other page gives you. Hold the fruit. If it fills your palm it is large, if it sits in your fingers it is small.
    4. Say how you are squeezing it. Squeezing by hand leaves about a fifth of the juice behind. The setting starts on a handheld press, which is what every published yield figure assumes.
    5. Read the spoons, not the decimal. "3.17 tablespoons" is not a thing anyone measures. "3 tbsp + ¼ tsp" is.

    Why this calculator is different

    Search how much juice is in a lemon and you will be told two tablespoons, three tablespoons, three to four, and four to five, on the same page of results, by pages that never acknowledge one another. None of them explains the disagreement. It is not a rounding argument and it is not small: the gap between the highest and lowest answer is more than double.

    • It asks what size fruit you have. That is the entire explanation for the contradiction above. Every one of those pages is describing a real fruit and quietly assuming you have the same one. A medium lemon is three tablespoons and a large one is over four.
    • It reconciles USDA with the recipe sites instead of picking a side. USDA publishes 44 g of juice per lime. Every food magazine publishes 2 tablespoons, which is 30 g. Both are right. USDA measured a large lime and the magazines are describing a medium one, and once size is an input the two stop contradicting each other.
    • It works backwards. The question in the shop is never "how much juice is in this lemon", it is "how many lemons is half a cup". It answers that, in whole fruit, and tells you when buying one fewer would still be fine.
    • It shows the arithmetic. The card lists the fruit weight, the yield percentage, the squeezing adjustment and the density it used. No other page on this subject shows a single step of working.
    • Zest is scaled properly. Peel is a surface wrapped around a volume, so a lemon that is a third heavier carries only a fifth more skin. Charts that scale zest with weight overstate a large lemon by most of a teaspoon.
    • The math is tested on every build. Sixteen sourced cases plus roughly two thousand generated assertions: the published anchors reproduce, every conversion round-trips, and no combination of six fruits, three sizes, four methods and four units can produce a negative or infinite answer. If any of it drifts, the site does not deploy.

    How it works (the math)

    One constant, and it is not a per-fruit lookup table. Juice is a fraction of the weight of the whole fruit, peel included.

    1. The yield fraction is 45 per cent of whole-fruit weight, the figure Cooperative Extension publishes for lemons, and 48 per cent for Meyer lemons because the peel is thinner. That single number is doing all the work, and the reason to trust it is that it reproduces four separate published figures that were measured independently of each other: USDA's 48 g per lemon, USDA's 44 g per lime, USDA's 196 g per grapefruit, and the two tablespoons per lime that every recipe site quotes. Nothing was tuned to make those line up.

    2. The size ladder is a whole-fruit weight per size, cross-checked against the reference diameters USDA measured. A lime at their 2-inch reference is a 69 cm³ sphere, which weighs about 67 g, and 67 g at 45 per cent is exactly the two tablespoons the food world quotes. A lemon at their 2⅛-inch reference, taken as an ellipsoid rather than a ball, comes out at 107 g, and 107 g at 45 per cent is exactly USDA's 48 g.

    3. The density converts weight to volume, and it is different for each juice. USDA weighed a cup of each: lemon juice is 244 g, lime 242 g, orange 248 g, grapefruit 247 g. Using water's density for all four, as most conversions quietly do, is a 2 per cent error before you start.

    4. The squeezing adjustment is the one part of this that is not published, and it is labelled that way on the card. A press or reamer is the neutral setting because it is what the published figures assume. Hand-squeezing is set at 80 per cent and an electric reamer at 105. Treat those two as this kitchen's experience rather than as measurements.

    Limitation. Every figure here is an average for a typical fruit in decent condition. A lemon that has been in the fruit bowl since last week, or a thick-skinned one at the end of its season, will miss low by a tablespoon and nothing on this page can know that. The honest use of this calculator is to get your shopping list right and to stop you buying three limes for a quarter cup. Buy one more than it says.

    Three worked examples

    A recipe that says "the juice of one lemon"

    This is the most common phrase in cooking and one of the least precise. Unless the recipe says otherwise it means a medium lemon, which is about 3 tablespoons, or 1½ fluid ounces. If you only have small lemons you are a tablespoon short on every one, which in a vinaigrette is the difference between bright and flat. It also means about a tablespoon of zest, and zest is where most of the lemon flavour actually lives.

    Half a cup of lime juice for a margarita batch

    Half a cup is 4 fluid ounces. At two tablespoons per medium lime that is four limes exactly, so the calculator says buy five and tells you four gets you within a splash. Limes are the fruit where hand-squeezing costs you most, because they are small enough that the last fifth of the juice is genuinely hard to reach with fingers alone.     Three medium navels gets you to 0.98 of a cup, which is why every chart on the internet says three oranges. Strictly you need 3.06, so this page tells you to buy four and then says three is close enough, because the alternative is sending you back to the shop over 5 ml.     How much juice is in one lemon?

    A medium lemon gives about 3 tablespoons, or 1½ fluid ounces. A small one gives closer to 2½ and a large one just over 4. USDA publishes 48 g of juice for a reference lemon, which is 3.2 tablespoons and matches the medium figure here. The widely repeated "2 tablespoons" is a deliberately cautious number that assumes you have a small lemon and are squeezing it by hand, which is a reasonable thing to assume and a bad thing to leave unsaid.

    How much juice is in a lime?

    2 tablespoons from a medium Persian lime, which is the standard supermarket lime, plus about 2 teaspoons of zest. A large one gives nearly 3. Key limes are a different fruit for this purpose: they are golf-ball sized and give about a tablespoon each, which is why a Key lime pie recipe sends you home with a whole bag.

    How many lemons do I need for 1 cup of juice?

    Five to six medium lemons. The exact figure is 5.07, so five will very nearly do it and six removes all doubt. For limes it is eight to nine, for oranges three to four, and for grapefruit just over one. Buy an extra either way: these are averages, and the one dry fruit in the bag is the one that ruins the arithmetic.

    Why does every website give a different answer?

    Because they are describing different-sized fruit and not one of them says so. A medium lemon is 3 tablespoons, a large one is over 4, and a small one is 2½. Every number in circulation is a real measurement of a real lemon; the disagreement is entirely about which lemon. It is also why USDA's figures look high next to the food magazines'. USDA measured bigger fruit. Set the size control above and the contradiction disappears.

    Does bottled lemon juice substitute one for one?

    By volume, yes, and it is fine anywhere the juice is a background acid: a brine, a braise, something that will cook for an hour. It is not fine where the lemon is the point. Bottled juice is pasteurised and carries preservatives, so it tastes flatter and slightly bitter, and it has no zest attached, and in a lemon tart or a vinaigrette the zest oils are most of what you were after. Use the fruit when you can taste it, use the bottle when you cannot.

    The calculator tells you how much juice is in there. Getting it out is a separate problem, and it is almost entirely about leverage.

    • A handheld squeezer, for a lemon or two. The single best five-dollar object in a kitchen. It inverts the half as it presses, so it strips the membrane rather than just crushing it, and it catches the pips on the way out.
    • A lever press, past about six fruit. Hands give out long before the fruit does, and a tired grip is exactly when yield drops. This is the tier where you stop losing juice to fatigue. The hand press juicers we rate are sorted by how much counter space they demand.

    • A microplane, because you are throwing away the best part. Most of a lemon's aroma is oil in the peel, not acid in the juice. Zest before you cut, every time. It takes ten seconds and you cannot do it afterwards.

    Juice mass is 45 per cent of whole-fruit weight, 48 per cent for Meyer lemons. Volumes use a per-fruit juice density derived from the USDA 1-cup weight divided by 236.5882365 ml. Zest scales as weight to the two-thirds power, because peel is a surface. The squeezing adjustment (0.80 by hand, 0.95 reamer, 1.00 press, 1.05 electric) is the one unpublished part of the model and the press setting is neutral, so the default answer is the sourced one. Shopping answers round up to whole fruit, and flag when one fewer would leave you less than a teaspoon short.
